Blue-berry mousse with grilled venison and apple

Hint:
We recommend it for duck with grilled fruits.

Ingredients:

  • 0,5 litre LISS Cream Whipper
  • 1 LISS Cream charger
  • 250 ml heavy cream
  • 200 g Blue-berry jam
  • Juice of 1 orange
  • Juice of 1 lemon
  • 25 ml red wine
  • a pinch of salt

Completion:
Pass the blue-berry jam through a fine strainer. Mix it with the other ingredients and pour it into the LISS Cream whipper. Screw the head and shake 15-20 times vigorously. Screw in one LISS charger. Before serving shake it 8-10 times and press the mousse before serving.
